Healthy Sweets: Chocolate Drizzled Peaches with Bourbon Whipped Cream

The Urban Farmer arrived at home with a box of local peaches, which meant it was time for some healthy sweets! These chocolate drizzled, raw peaches are just the healthy sweets you need to satisfy your dessert cravings, and best of all, they come together so simply.

This could be the title of my memoir. There’d be musings on triumphs, of putting pestering ideas into the world and surprising myself with how beautifully a dinner event came together. Then there’d be sections covering the very improvised photo shoots, arriving late, weather fails, port-a-potty fails (eeeek!) and those Sundays when I had “grand plans” of baking.

Those are the Sundays when my need for recuperation just plows through my plans to make a dessert, even if I promised to bring something to a gathering. This easy peach dessert was born on a Sunday like that. I though surely my family would see the laziness in these peaches, but much to my surprise, these healthy sweets were a big hit. It just goes to show, sometimes it’s best to throw the grand plans out the door (that’d be the big conclusion of the memoir obviously)!

You could roast or bake the peaches for that extra caramelized taste, but since we are smack dab in peach season, there’s so much sweetness in the raw fruit. Why mess with a sweet thing?

The dark chocolate drizzle is a simple combination of dark chocolate and coconut oil. It’s the same drizzle I use for my Peanut Butter Popsicles. Some of those same popsicle toppings would work for these healthy sweets too (chopped nuts, propolis, etc). Keep the chocolate drizzle on hand, and you can make an individual serving peach dessert when the craving hits.

Light, fluffy and sweetened with honey, the vanilla Bourbon Whipped Cream makes these healthy sweets taste like a really indulgent ice cream sundae. Dark Chocolate Drizzled Peaches

Yield: 10-12 peach halves

Ingredients

10-12 pitted peach halves
1/3 cup extra dark chocolate chips (such as Guittard)
1 Tablespoon coconut oil
unsweetened shredded coconut

Directions

When ready to drizzle, place pitted peach halves on a baking sheet lined with parchment paper. In a saucepan over medium-low heat, melt the dark chocolate and coconut oil, stirring constantly, until combined. Then drizzle the chocolate mixture over the peaches. Top with shredded coconut, then a dollop of Bourbon Whipped Cream and an extra drizzle of chocolate. 


Bourbon Whipped Cream

Ingredients

1 cup organic heavy cream
1 Tablespoon local honey
1-2 teaspoons organic vanilla extract, to taste
1-3 Tablespoons bourbon, to taste

Directions

Chill the cream in a mixing bowl in the freezer until the cream just starts to freeze. Remove from the freezer. Add the honey and vanilla.

Use a mixer, on medium speed, to beat until peaks begin to form. Add the bourbon, and continue to mix until combined. Keep chilled until ready to serve.
