Spiced Maple Simple Syrup
fresh ginger, sliced
In a medium pot, bring the water, maple syrup, cinnamon, cardamom, star anise, ginger, and orange peels to a boil over high heat.
Boil for 2-3 minutes, then remove from the heat. Cover, and let the spices and peels infuse for at least 30 minutes.
Let cool, then strain the syrup into a glass jar.
