My eyes were GLUED to the enigmatic recording software, lines flaring like a frenetic life-support monitor. The producer/engineer clipped, elongated, patched and layered vocals like a wizard. He added flourishes that lodged little tunes in my brain and made me reconsider every song I’d ever heard- how little I had appreciated the magnitude of work that goes into each song!

How does a stylist/blogger end up in a recording studio? 

I was there for a work related project (I will definitely tell you more about why I was there when I can), pinching myself that my path and the good people in my life would bring me here. What I can tell you is, when life seems the most random, or when career tangents make little to no sense on paper but make my face hurt from smiling, that’s when my life feels the most on track.

Corn for dessert may seem random or as out of place as me in a recording studio (especially if you hear me sign- ha!), but I assure you, once you try this Frozen Corn Tart, sweet corn as a sweet conclusion will make sense.

Roasting the corn brings out its natural sweetness. Blending those sweet kernels with rich, healthy coconut cream yields an ice cream like dessert on a chocolate cornmeal crust. I’m nothing if not thematic.

And what’s a sweet corn treat without a little caramel? Argentina (and more alfajores than I could count) taught me that. If you’re feeling ambitious, try my homemade Scotch Caramel, or Smoked Sea Salt Whiskey Caramel, or if all your energy is spent after roasting and pureeing corn, I have it on good authority Whole Foods has an organic caramel that you can justify using as a little indulgence.

Vegetarian Polenta “Bolognese” with Garlic Flatbreads + Leftovers Mezze

Polenta with a little extra herbs and salty parmesan, a tomato sauce with lentils and sweet, soft garlic are the backbone of this dinner idea. These recipes are loose guides. Simply use what you have on hand for the sauce and follow your instincts, but add lentils for an easy, affordable meaty flavor. Then pair the leftover red sauce with another batch of garlic flatbreads, hummus, tahini sprinkled with za'atar, olives, raw fennel, radishes, or whatever crudités you have on hand, for a Mediterranean/Middle Eastern inspired Mezze.

Whole Grain, Browned Butter, Zucchini Cornbread

Glasses with varying levels of optimism/pessimism litter the surfaces of our apartment, creating a steady morning routine of retrieval. The many water glasses form trails of our attempts to beat the heat, a sip here, melted ice there, a refill, a new glass… until the sink is full, and the cycle repeats. Meanwhile, our little fur-baby leaves pockets of heat on the floor, as she shifts from cool tile, to hallway darkness, to that slight office breeze. Poor little one. It’s hot. It’s humid. It’s summer, and I love it, but none of our apartment situation really makes me scream, “let’s baaaake!”

So for the most part, the oven finds itself on a summer vacation, its energies reserved for quick bursts of pizza-making on busy nights or warming weekend pancakes. However, when it comes to celebrating two years with the love of my life, I brave the heat. On these sorts of summer occasions, the oven and I really set to work!

I don’t just bake, I commit. I turn on a long playlist, I grate, beat, pour, dance, scurry… and “glisten.” I commit because two years is special and because it’s that time of year when zucchinis demand acceptance and creativity because, like the heat, they are part of summer.

Like so many avoided activities, once I start, I just keep going, and bread leads to pie, but that’s another story. My Southern-Inspired Menu called for cornbread, but the season called for zucchini. This bread is both. It’s hearty enough to pair with fried chicken and deviled eggs but sweet enough to slather with butter and honey for breakfast.

Roasted Corn Summer Salad

Few ingredients inspire a love-hate relationship in me the way corn does. As a Nebraska-born girl, I feel a certain ingrained allegiance to corn- its sweetness, its bright, golden hue, its utilitarian cob, the accoutrements (corn-contoured butter dispensers, prongs, etc) and the way biting into an ear of corn makes summer just feel like summer. As a sustainability advocate, I resent the way corn came to dominate the landscape, reduce crop varieties, deplete soil minerals and become a secret, sugary ingredient in just about everything! In the spirit of summer and positive reinforcement though, this is an ode to my love of corn.

Roasting intensifies the corn’s innate sweetness. Paired with juicy grape tomatoes, spicy radishes, creamy avocados, hot peppers fresh from my honey’s fields, tangy feta and more, this salad captures the bold colors and fresh flavors of summer. It’s an easy salad to contribute to a summer bbq or cookout. In my case, it was part of my South American Inspired Picnic to celebrate my one year anniversary with the Urban Farmer. As a picnic food, pair this salad with plantain or corn chips for utensil-free eating.

This salad isn’t meant to be dogmatic. Start with the roasted corn, trust your palate and follow your cravings. You can easily make it vegan, and if you have leftovers, add them to an omelette at breakfast to enjoy corn at every meal possible. It is summer after all, and this is when corn deserves a chance to shine!
