Our House As A Pie: Whole-Grain Gluten-Free Mixed Berry Pie

When it came time to thank our realtor for her part in our dream, I expressed my gratitude in my favorite way: through butter and flour. I made a pie with our Hilltop house on the crust and baked it with love. You don’t have to carve your dream house into the crust to make this pie, but I do hope you use this recipe to thank someone special in your life.

Balsamic Berry Pie with Peonies for Josh

I've been inspired by pie, by combining my love of drawing and baking in freeform pie crusts. I've found freedom in the fraisage method of folding butter into whole grains. I've found mindfulness in carving pie crust into delicate, fleeting flowers. And of course, there's no reward quite like flaky pie crust, warm summer berries, and a scoop of ice cream.

As June came to a close, Dylan and I swayed in a hammock atop a tree-lined hill. The pups circled their leashes around our support trees while we schemed and dreamed how to fill the summer with intention. What would we do to embrace the heat? Where would we go to find quiet? Gluten Free Whole Grain Pie Crust That Doesn’t Suck

Pie guide after pie guide will tell you, with great emphasis, "do not overwork the dough," but where are all those pie guides when the liquid is spent, and the dough resembles a swath of desert? CRICKETS! The whole process puts my perfectionist self on edge because all I want is to deliver the flaky pie crust that friends and family (and sometimes complete strangers) expect, and I want it to be whole grain. That's challenging enough, but then, you want to make a gluten free whole grain pie crust? Well, here it is!
