Beneath my permed hair and  80s-inspired poof of bangs, my eyes were wide with horror! My elementary school teacher had just reported a staggering statistic about how much food waste ended up in landfills. My miniature, environmentalist heart could hardly take it. Today, the statistic is even more staggering at 33 million TONS of food each year (source).

I’m not perfect, and mold still claims more of my refrigerator’s contents than I would like to admit, but thanks to the Urban Farmer, most of our scraps become compost and contribute to the soil remediation process on the farm. I know composting isn’t a possibility for a lot of urban dwellers, but this girl can dream of the day my city will take action to mitigate food waste (many cities already do!). In the meantime, I am constantly seeking ways to waste less such as this win-win idea for wasting less food this holiday season.

The first part of this resourceful idea requires wine drinking- specifically Mulled Wine drinking. As I mentioned in my recipe post, Mulled Wine is the perfect drink to serve this time of year. It fills the home with a welcoming aroma, it’s easy to serve to a group, it’s a sipper, and it warms your spirit! However, after the last mug of mulled wine has been poured, the crockpot usually still holds a substantial portion of fruit. I couldn’t bear to toss all the wine and spice-infused fruit, so this Mulled Wine Compote was born!

I call this “Grandmother-style kitchen work.” There’s no precise recipe. Just throw that flavorful fruit into the food processor or blender, and whirl away! For a hint of sweetness and creaminess, I added a heaping spoonful or two of Creamed Honey. This liquid gold is like creamy caramel (you can learn more about creamed honey here). Bedillion Honey Farm’s version is still raw, so it maintains the goodness of pollen, propolis and enzymes pasteurized honeys lose, and it’s creamed with cinnamon for an extra touch of spice in the compote.

I also added another spoonful or two of Chinese Five Spice to intensify the fall notes.

My leftover crock of fruit made about 2 quarts of Mulled Wine Compote, which I divided into jam jars to give as gifts and serve at future gatherings.

The compote makes a great accent on a cheeseboard, so for very little effort, you’ll be prepared for a few small, holiday gatherings. The tart compote pairs well with the slight sweetness of these Carr’s Whole Wheat Crackers or a dense, fruit & nut bread. It would also be delicious on pancakes or French toast if you’re hosting a holiday brunch.

Mulled Wine Compote

To make mulled wine compote, reserve whatever wine is left from a batch of mulled wine (recipe below), and set it aside. Use a food processor or blender to puree the wine-infused fruit remnants of mulled wine (but remove the cinnamon sticks first). Add honey and more Chinese Five Spice to taste. Keep refrigerated until ready to serve. It also freezes well.

From their pop-up village of log cabins, Germans shared their merriment through juicy bratwursts and donuty sweets swirling on skewers to golden perfection. Some of the merrymakers kept warm by whipping around the ice rink to holiday carols. Others, like myself, turned to the warm cups of mulled wine. London knows how to celebrate the holidays!

Having journeyed to London from conservative Pennsylvania, where public displays of wine drinking only happen in conjunction with communion, I gazed at each sidewalk wine vendor like a child beholding a candy shop. I relished each cup of mulled wine as if it were my last. With a warm cup of mulled wine in my clutches, my hands warmed, my spirit warmed, and I felt inspired to roam the vibrant city long into the wintry night.

Though the street-vending of mulled wine is still a ways away (at least for us in Pennsylvania), this warm indulgence is perfect for stateside holiday gatherings. Mulled wine is easy to make, easy to serve, and the heat and spices make this a sipper. Since guests can serve themselves, it’s the perfect drink to offer with a wine and cheese style spread. Below are some of my favorite Market Street Grocery picks for hosting a small holiday gathering.

My love for baguettes is deep, but when it comes to a holiday party spread, I like to pick a heartier, more flavorful bread like this Raisin Walnut loaf from Allegro Hearth Bakery. Even after guests have finished their mulled wine and the party has concluded, you’re likely to have plenty of wine and spice-infused fruit still filling your crockpot. One of the secret ingredients in this Mulled Wine recipe is Chinese Five Spice, a fragrant combination of anise, cinnamon, star anise, cloves, and ginger, so don’t let that flavorful fruit go to waste! Homemade Bourbon BBQ Sauce & Thoughts for my Dad

From the greeting cards to the gift ideas, Father’s Day tends to err on the side of grilling, golfing, and “man of the family” stereotypes. Perhaps one day, fathers will commonly receive bouquets and mothers will be equally associated with the grill, but in the case of this Father’s Day, I allowed myself to dip into classic gender divides. After all, as a child of the 80s, it was my dad at the grill, and those summer bbq’s are some of my fondest childhood memories. I shared this Homemade Bourbon BBQ Sauce locally, as gifts for the Urban Farmer’s father and brother, while miles separated me from my own dad.  Though editorial calendars would shame me for a delayed holiday reference, this is real life, and in real life, sometimes you acknowledge birthdays, holidays and worse yet, true feelings, late.

As the “blessing child” [ie: an “oops baby”], I arrived on this earth significantly later than my siblings, keeping the nest occupied long past its warranty. As a little girl, the age gap was just a number. I had extra attention, more people to read to me and inspire a love of language, more people to take me on adventures and treat me to donuts! As I grew up, the age gap became isolating at times. I felt caught between alliances with my siblings and parents, wanting to defend each. By the time I was in high school, my sisters were settling down and starting families. My parents were grandparents!

Meanwhile, I was a blank slate with an intense need to see the world and carve my identity. I forged a path that took me to various continents, and seeing life through these different lenses changed me dramatically. I returned home a little different each time, a little less relatable. For parents who had literally taken horse-drawn carriages to one-room, country schoolhouses, the divide between our experiences was immense. I tried to remember this, tried to see the world through their eyes, but impatience and fierce independence often convinced me just to distance myself.

The baby of the family never fully shakes that “baby” role. If I grew up, it meant everyone else was aging too, so it was easier to continue to think of me as young, naive, misguided, weird, in a phase, etc. It was easier just to dismiss my differing opinions, stances I had worked so hard to carve for myself. The woman I had become confused my father more than anyone. Little QT never argued so much. She never objected to his beliefs. It hurt, so we both closed up, and I fled emotionally, until I one day realized, I too was ignoring the passing of time. I risked never saying or hearing the needed words because I was bottling them deep inside me under a stubborn lock. A friend encouraged me to be honest, to seek the exchange I wanted. In one grueling, vulnerable exchange, my father and I bridged generations, mended wounds and slowly moved forward.

He had wanted me to be tough, to stand on my own two feet, not to need him. He achieved his goal but at the cost of the encouragement a daughter needs every now and then. Had we never confronted our wounds, we both may have let too much time pass and fill with regret. Instead, we were able to sit in a cafe, and I saw and heard what I had so desperately wanted to hear- he loved me and was proud of me. It seemed so simple, but it was everything. For my part, I owed him respect he feared had vanished.

I wouldn’t be me without my dad. I wouldn’t have big dreams, a head full of ideas and an intense grammar fixation. I wouldn’t respect the farmers, growers and animal tenders without seeing his struggles and his passion. I wouldn’t see neighbors as part of my community if it weren’t for him, or see complete strangers as people who just need a laugh. I wouldn’t believe in the power of people to change if I hadn’t watched him change so dramatically though the years. He coached me to stand alone, but I’m grateful he’s still there wanting to support me.

Ignore clocks, calendars and prescribed days. Ignore your stubborn side because we babies of the family do age, and time does pass. Listen to that friend who tells you to say what’s on your heart. Celebrate a stereotype if it means celebrating your dad. Fire up the grill, and give flowers to your mom. My dad and I are in different states, and we still differ in so many ways, but I like to think we’ll be eating bbq burgers together soon. Part of me, will forever be his little girl.

Homemade Bourbon BBQ Sauce

About This Recipe: This is a nuanced bbq sauce, with so many flavors emerging with each bite! Smear it on burgers, or dip sweet potato fries in it. You’ll be tempted to eat it with a spoon! This recipe is intended to make several portions for the sake of gift giving. Reduce it if you’re just making sauce for a bbq, or freeze leftovers. To make it vegan and gluten-free, be sure to buy organic Worcestershire and Liquid Smoke, and double check the labels. I might make this again without Worcestershire, since so many of its ingredients are already part of the sauce. I added the bourbon at the last minute, to retain as much flavor as possible. The residual heat from the sauce should cook out the majority of the alcohol content. I used Blanton’s Single Barrel Bourbon for an extra special touch!

An Ode to Motherhood: Whole Wheat Rhubarb Upside Down Cake & Rhubarb Compote

Long after I should have been sleeping, I laid awake thinking about my dog. I thought about how much I loved this four-legged creature who couldn’t even utter words to me, but yet, I feel so connected to her. I thought about how I’ve only been away from her for about 2 weeks in her entire lifetime. I thought about how betrayed I felt the one time she growled at me. I thought about how I “joke” about her loving the Urban Farmer more than me because he takes her to the farm, where she has utmost freedom and a sense of purpose. I thought about how I miss the spending the entire day with her, but ultimately, I’m happy she loves the Urban Farmer, and I know the farm is her little sheepdog destiny. In short, I realized just how much I love my little Julep because I’m able to put her happiness above my own. This, I realized, from my sleepless, crazy-dog-lady thought stream, is only 1/100th of what it must feel like to be a mother.

I am my mother’s daughter- from her cheekbones, to her voice, to her profile, her eyes and her hands, but when it comes to her patience and her selflessness, I am still a child, a mere student trying to copy the experienced professor’s example. When it comes to sacrifice and thoughtfulness, I have yet to find an example greater than her.

As soon as I was old enough to toddle around, I was in her lap attempting to sew with her. In Middle School, she helped me start my own sewing business. In High School, she sewed the prom dresses I designed. She was my sounding board, my moral support, my constant encouragement, and she loved me more than I can imagine, but as I left our home, the very last baby bird to leave the nest, I drifted farther from her in more ways than one.

I needed to find myself, to see the world, to figure out where I stood and what I believed. During the course of that time, I distanced myself, a stance my loving mother clearly noted. In one of her many handwritten, thoughtful notes to me, she expressed sadness over the gap that had grown between us, and a piece of my heart broke. I had so selfishly hurt this woman who gave me everything and asked for so little in return- just my company. I’ve tried to mend, tried to mitigate the major differences between us, tried to defend her happiness, but when I think of how much she has given me, I realize how short my efforts have fallen.

This is motherhood, I suppose- sweet and tart, ups and downs, immense joys and immense sorrows, and as all of those extremes flash by way too quickly, the thread of love remains just as secure, despite whatever other unraveling occurs.

I’m not a mother, but I have a deep respect for those exemplary women who nurture that love, for all its burdens and rewards. I respect those women who love with such a powerful force, no other relationship can even come close to its strength. Conversely, I sympathize for those women who want that bond so badly, but for whatever reason, never have the opportunity, or for those who do, but only for a moment. Sweet and tart.

This Mother’s Day, I was fortunate to spend the day with the women who shaped the Urban Farmer, who loved him, nurtured him and encouraged him to be the ambitious, sympathetic, sincere man who I admire and love wholeheartedly. When I was all too young to be receiving dating advice, my sisters ingrained in me the importance of a man’s relationship with his mother. “If you want to know how he’ll treat you, look at how he treats her,” they told me when the only men in my life were Prince Eric and Aladdin. As an adult, I understand the lessons my sisters were trying to impart, and the Urban Farmer’s relationship to his mother and grandmother only makes me love him more.

These Rhubarb Compotes and Rhubarb Upside Down Cake were for the Mothers on their day. The local, seasonal ingredient choice was a nod to my own mom, who resourcefully collected the stringy stalks from the puzzled neighbors’ yards and returned beautiful, delicious, seemingly effortless desserts in their stead. My Mom was and is magical in the kitchen, but more importantly, she’s just a magical woman. Happy Belated Mother’s Day to my own mother and to all you who endure the sweet times and the tart times of motherhood!

About These Recipes: Rhubarb season is early spring, so take advantage with these two recipes. The upside down cake contrasts the tartness of the rhubarb with zesty lemon and almond flavors in a moist, spongey cake. Rhubarb compote is perfect on toast, on pound cake, on ice cream, in yogurt, etc, or add a spoonful to the heavy cream and make a tart and tangy whipped cream to top this cake.

Whole Wheat Chocolate Banana Tres Leches Cake

Cinco de Mayo 2015

Today would be a good day to be a high-school Spanish student. Today all the French and German students would watch you tote chips and salsa to class with jealousy (or Latin, Japanese & Arabic students if you went to a very privileged school with an eye toward the growing global economy). Today is Cinco de Mayo, and even if the historical connotations are fuzzy (you did read them in Spanish after all), one thing is clear: today is a Spanish class party day!

In thinking back to my own high school, Spanish class, cultural “immersions,” I recall one very late night, when months of procrastination hit me like a prickly cactus. I scoured the then very basic pages of the world wide web and attempted to finish a major report on Spain, taking the necessary breaks to lament my woes over AOL chat and catch the latest gossip to emerge in the hours since the end of the school day. The massive report would have been enough to bear for one night, but I also had to make tortilla bowls for the class.

The level of procrastination hedged on teaching me the error of my last-minute ways, but as always, everything somehow came together, i.e.: Mom enabled my habits and helped me with the tortilla bowls but not without her routine, “If you had only planned ahead…”  I barely slept, scraped together my report and still managed to be the number one Spanish student. Like an alcoholic deluded into believing she is still in control, I failed to hit rock bottom and truly learn my lesson. At least I knew (and know) I have a problem. The next steps though…

Far from high school halls and Spanish class celebrations, I did manage to commemorate Cinco de Mayo in a timely manner with this festive themed brunch. This Whole Wheat Chocolate Banana Tres Leches Cake was the sweet conclusion of the gathering, and though I should have shared this recipe with you sooner (my apologies), I hope you have a chance to indulge in a decadent, chocolaty bite and make a small nod to today’s festivities, even if you are late. Holidays are really flexible in my book anyway [spoken like a true procrastinator].

Whole Wheat Chocolate Banana Tres Leches Cake

About This Recipe: Plan to bake this cake the day before you intend to serve it, since it needs to set overnight and soak up the chocolate liquid. My recipe begins with a spongey, chocolate, banana cake. Traditionally, the namesake three milks include evaporated milk, but I substituted coconut milk for a healthier twist. The chocolate mixture is poured over the cake right after baking, and the chocolate forms a rich pudding-like layer after setting overnight. The banana taste is subtle, and the coconut milk is indistinguishable, so if you don’t like coconut, you’ll still enjoy this version.

A Cinco de Mayo Brunch w/ Huevos Rancheros “Nests”

May 2015 

Without any regard for my presence, just across the regularly traversed street, he emerged from his home, with a lawn chair and a bare chest. His gut bore the brunt of years of overeating, while his sporadically tattooed arms remained relatively thin. He set the chair on the sidewalk, one of the main sidewalks of this neighborhood, and he sank into his seat. He cinched up the ends of his nylon sport shorts so as to allow more sun exposure on his upper thighs, which also boasted random tattoos. The tan-line-threatening socks and killer 80s-style high-tops seemed to confirm the rumors of his return from jail and a lingering ankle bracelet. As he settled into his sun worshipping routine, I heard a sound I haven’t heard in ages- the spritz spritz of what I can only assume was tanning oil and not sunscreen.

It was noon, which meant the early spring rays were shining directly on his already bronzed body. He closed his eyes and sank into the chair without a care for his appearance or what the neighbors might think. As the sun traveled through the sky, he rotated his chair, and with closed eyes, he positioned his head toward the warm rays. It was as if he had emerged from 1980, when tanning didn’t cause skin cancer, when perhaps this street was more neighborly, when he didn’t have a record. In some ways, this soon-to-be leathery, ex-con was enviable. There he was, idling away a spring afternoon, giving zero fucks about the ozone layer, his waist line, nosy neighbors, recent fashion trends or the discomfort of pedestrians in his vicinity. Maybe it was his alleged time behind bars, but this neighbor was really soaking up the spring moment.

I’m not adding this man to my heroes and role models list by any means, but this indifferent sunbather did reiterate this goal: bask away an afternoon and just forget everything else! This goal is why I host Sunday brunches. No lines, no wait, no stressed service industry, no surprisingly bad menu items, no sending back an undercooked egg, no thoughts for Monday, etc. Just brunch, conversation, a thoughtful menu, and in the case of this early Cinco de Mayo celebration: a little outdoor time with some sunshine…

When it comes to brunch cocktails, I like an elixir that uses the palate as the guide, not a complicated recipe of ratios. I infused mango nectar juice with (de-seeded) jalapeño pepper slices, pomegranate seeds, chunks of pineapple and mango and served the spicy, fruity combination with additional limes and tequila for the taking. I salted the rims of the glasses with Pink Himalayan Sea Salt for an extra colorful touch.

The menu consisted of these Baked Tortilla Egg “Nests” with sour cream and guacamole (recipe below), as well as tropical fruits and a Whole Wheat Chocolate Banana Tres Leches Cake for dessert (recipe to come). There was plenty of iced coffee, and Bess kept the drinks flowing! Progressively, the tequila portioning became more pronounced, as it should on a zero-fucks Sunday brunch.

The right weather, and the right friends with their quick wits and sarcastic humor, made me feel a little like the bronzing neighbor. Worries and cares seemed to slip away with each sip of Mango & Tequila. The Chocolate Tres Leches Cake was just the right sweet indulgence, as we exchanged tales of awkward crushes, gossip, goals, plans, progress… all the topics you want to hit with good friends on a Sunday. Each of these creative friends is a mover and a shaker in her own right, so there’s always lots to discuss (Dane, Kelly and Bess), and I’m grateful for the ways they each support me too.

Tortilla Egg Nests/Huevos Rancheros Cups

About This Recipe: These nests combine all your favorite Huevos Rancheros flavors, but baking them makes them a perfect brunch option, since you pop them in the oven and can focus on other details. The recipe below uses a frozen, Fire-Roasted Sweet Corn from Trader Joe’s. If you can’t find that variety at your local TJ’s, you can use regular frozen corn, and roast it with the sweet potato. The idea behind these is loose and flexible. Add other taco favorites or meat for a different variety. I used a pineapple salsa for these cups, but use whatever salsa you love. There may be extras of some of the filling, as the portioning is pretty loose. Depending on your menu, plan on most guests eating two of these.

Donut o’ the Month for @Jojotastic: Irish Coffee Custard Donuts

For those of you who value the sanctity of St. Patrick’s Day, i.e. the American St. Patrick’s Day of reappropriated Jameson, Guinness and general shenanigans, I have a donut for you! This donut will either nurse you to health if you partook in weekend revelries, or it will kick off your merriment if you hold the 17th to be the true day of commemoration. This is a “hair of the dog” donut, (though in an appealing, palatable way, I assure you). How did “dog hairs” come to cure hangovers?

While we are reveling in booze and history, the Irish Coffee has a tiny tale of its own worth sharing. The original Irish coffee was invented and named by Joe Sheridan, a head chef in Foynes, County Limerick. Foynes’ port was the precursor to Shannon International Airport in the west of Ireland. The coffee was conceived after a group of American passengers disembarked from a Pan Am flying boat on a miserable winter evening in the 1940s. Sheridan added whiskey to the coffee to warm the passengers.

After the passengers asked if they were being served Brazilian coffee, Sheridan told them it was “Irish coffee.” You can almost hear his authoritative accent cutting through the fog and mist while forcibly handing piping hot coffees to the weak Americans. He should have been a hero and a legend, but instead, we imbibe brunch after brunch without paying proper homage to this whiskey hero. Shame on us.

Inspired by the hair-of-the-dog qualities of an Irish Coffee, this powdered sugar donut hides a Jameson-laced, coffee custard, and it’s not for the faint of heart. The Jameson is added after the custard has cooked, so the alcohol content remains. Steer clear of kids, coworkers and bosses, and slip away on St. Patrick’s Day morning. Enjoy this boozy breakfast with a (spiked) coffee and cure what ails you (or brace yourself for what will ail you).

About This Recipe: The choice of organic brown rice flour means this donut is gluten-free and high in protein, iron, fiber and vitamin B. This recipe creates a very wet, sticky dough. It may look too deflated, but resist the urge to add more flour. Your donuts will puff up when fried. The cup of whiskey in the custard yields a very boozy flavor. Adjust according to your whiskey preferences. Make the custard first to allow enough cooling time.
