Start by buying a good quality chai tea. I used the Allegro brand from Whole Foods, and it was one of the most fragrant chai teas I’ve had in a while. Then, simply boil water, steep the tea bags, and notice. Take in the hints of vanilla, the spice of the cardamom, and the sweetness of maple syrup. Breathe it all in!

Vanilla Chai Cognac Old Fashioned

Ingredients

Chai Simple Syrup

  • 1 cup water
  • 5 chai tea bags
  • 1/3 cup bourbon-barrel maple syrup
  • 1 Tablespoon vanilla extract

Chai Old Fashioned

  • 2 ounces 1/4 cup cognac
  • 1 ounce lemon juice
  • 1 dash orange bitters
  • 1-2 ounces (2-4 tablespoons) chai tea syrup

Optional Toppers/Variations:

  • Ginger beer for topping
  • Cinnamon sticks
  • star anise
  • fresh thyme

Directions

Chai Simple Syrup

  • In a medium pot, bring the water to a boil. Remove from the heat, add the chai tea bags, cover, and steep for 10-15 minutes. Remove the tea bags and add the maple syrup. Bring to a boil over high heat. Boil for 3-5 minutes, then remove from heat. Stir in the vanilla, and set aside to cool. Refrigerate until ready to use.

Chai Old Fashioned

  • In a cocktail shaker, combine the cognac, lemon juice, orange bitters, and chai simple syrup. Shake to combine, then pour over ice. If desired, top with ginger beer.
  • Garnish with cinnamon, star anise, and a fresh sprig of thyme.
  • For an extra smoky flavor, singe the thyme leaves with a lighter.
