What my summer days have not been:
Poolside hangs. Beach trips. Movies under the stars. Summer arts festivals. Flea markets… basically, all the summery fun things.
In short, I’ve been sacrificing a LOT of my summer to work on a very BIG project that is near and dear to my heart. I’m not complaining, and I promise, I’ll stop with the cryptic references and talk about it all very soon. But for this little window of time, let’s just sip a bit of summer in the form of a Cucumber Watermelon Margarita with a side of cake and let the rest of adulting slip away. Sound good?

Cucumber Watermelon Margaritas
About this Cocktail: Made by blending fresh cucumber and watermelon, this cocktail is one part smoothie, so it’s not exaggerating to say we’re having happy hour the healthyish way. Simply blend watermelon and cucumber slices to your desired balance. Make some extra while you’re at it, so you can whip up round number two of these Cucumber Watermelon Margaritas with ease.
1 1/2 ounces tequila
1/2 ounce cointreau
1/2 cup cucumber watermelon juice
Juice of half a lime
1 cups ice
Margarita Salt or Trader Joe’s Chili Lime Seasoning
fresh mint sprig
Run a lime wedge around the rim of a glass and dip in salt. Fill the glass with ice. Fill a cocktail shaker with ice. Add tequila, cointreau, cucumber watermelon juice and lime juice. Shake to combine. Strain the cocktail over the prepared glass and garnish with a watermelon slice and fresh mint.
