Finally a marshmallow made from good stuff, so let’s celebrate with a Toasted Marshmallow & Cake Party! This post is sponsored by Healthyish Foods & SmashMallow, but all opinions are my own. Thanks for supporting the brands that keep me blogging.
We sat in a clearing in a picturesque meadow- a perfect balance of grain-like grasses and wildflowers with bluish mountains overlapping each other on the perimeter. The fire crackled, and out came the s’mores! It was summer at its purest, sweetened with that good ol’ American sandwich of chocolate, graham and marshmallow. I hadn’t had a s’more in a long while. I typically decline the offering, which warrants a lot of heckling and strange looks. “WHO DOESN’T LIKE S’MORES?!?”
It’s not that I don’t like s’mores, but I don’t like the go-to choices of ingredients. The ultra puffy, corn syrup clouds sadden me on a political food level (corn syrup, monocultures… don’t get me started), the ultra-cheap chocolate and overly sweet grahams. But on this perfect meadow occasion, I thought, “what the hell?”
I squished the crackers around the molten marshmallow and took a bite. I thought birds might sing as I returned to a place of childhood nostalgia, but instead, my adulthood smacked me in the face. Rather than notes of berries or nuts, the chocolate tasted like pure sugar, and the sticky white mess left me wanting more, way more.
It was this epic, meadow fail that led me to discover SmashMallow, a company who is reinventing the campfire classic by “smashing” unique flavors into a corn-syrup-free marshmallow. The result is by no means a health food, but it is a healthier way to indulge more responsibly and more playfully. Inspired by this discovery, I threw a little Toasted Marshmallow & Cake Party– a DIY dessert station combining Healthyish Foods’ Organic Cakes with a variety of SmashMallow flavors.
Toasted Marshmallow & Healthyish Cake Combos:
Healthyish’s Organic Tangy Lemon Cake + Organic Dark Chocolate Frosting + Organic Coconut Flakes (try them toasted too!) + SmashMallow’s Toasted Coconut Pineapple
Tip: For a toasted marshamallow cake, either whip out your culinary torch (and really impress your friends), or stick your baked cake topped with marshmallows, under the broiler, and watch it closely to prevent burning. Or, if you’re lucky enough to be near a campfire, toast that marshmallow the good, old-fashioned way, then top your cake, and enjoy!
Healthyish’s Organic Cocoa Brownie Cake + Organic Dark Chocolate Frosting + SmashMallow Mint Chocolate Chip Marshmallows
Variation: Try adding even more chocolate flavor with Healthyish’s Organic Dark Chocolate Chips too!
Healthyish’s Organic Tangy Lemon Cake (baked with Organic Poppy Seeds) + Organic White Chocolate Chunks + SmashMallow Meyer Lemon Poppy Seed Marshmallows + Organic Graham Cracker Crumbs
Healthyish’s Organic Bright White Cake + Melted Butter & Cinnamon + Organic Cinnamon Graham Cracker Crumbs + SmashMallow Cinnamon Churro Marshmallows
Try this take on S’mores:
Healthyish’s Organic Dark Chocolate Brownie Cake or Richie Rich Chocolate Cake + Organic Dark Chocolate Frosting + Organic Dark Chocolate Chips + Organic Cinnamon Graham Cracker Crumbs + SmashMallow’s Cinnamon Churro Marshmallow
Healthyish’s Organic Very Vanilla Bean Cake (baked with fresh strawberries) + Organic Cinnamon Graham Cracker Crumbs + SmashMallow’s Strawberries & Cream Marshmallows
Variation: Want to add strawberries to your cake? If you make this frosé recipe, you’ll have sweet simmered strawberries ready for cake batter and a summertime cocktail for your party guests.
There’s still more combinations to be made, and for that matter, there’s still a little more time for campfires and summer adventures. Order your own Healthyish organic cake kit, pick your favorite SmashMallow flavors, and let me know how your Toasted Marshmallow & Cake parties come together.
Cheers,
