The Country Mouse’s Cranberry Sauce

In anticipation of her cousin’s visit from the big city, the Country Mouse prepared her cranberry sauce with a little something extra- a splash of champagne!

The Country Mouse’s Cranberry Champagne Sauce


1 1/12 cups Champagne, or other sparkling wine

1 cup raw sugar
1/4 teaspoon salt

16 ounces fresh cranberries (or thawed frozen cranberries)
1/2 cup dried bing cherries

zest of 1 organic orange (~1-2 Tablespoons)


Pour the champagne, sugar and salt into a medium-sized pot. Bring to a boil, stirring occasionally.

Dump in the cranberries and dried cherries, bring back to a boil, then reduce to a simmer. Cook for 5 minutes.

Remove from heat, and add orange zest.

Cool to room temperature.
