An Epic Brunch of Minis (Part I): Mini Alliterative Frittatas

I had a brunch on the horizon- an EPIC brunch!  I would be mixing many friends, from various stages of my life in a veritable, “Quelcy Kogel, This is Your Life!” type of morning. The first goal of the menu planning was relative simplicity.  The second goal was variation. Most of these friends had found their way to my table before, so I was looking to offer something new to each and every one of them.  My solution was a miniature take on brunch staples, and in the case of the frittatas, miniatures with an alliterative twist (I am a language dork after all).  Stay tuned for the rest of the brunch!

Beets
Blue Cheese
Broccoli
Black Forest Bacon

Individual Alliterative Frittatas
Makes 24 Individual Frittatas

Ingredients

14 eggs (local/free-range)
1/4 – 1/2 cup organic heavy cream
black pepper, to taste
2 roasted beets, cut into chunks
blue cheese, crumbled
½ lb Black Forest Bacon, baked
1 organic broccoli crown, chopped

Directions

Preheat oven to 300 degrees F.

Line a muffinaire with parchment liners.

Add beets, broccoli, blue cheese and bacon to each cup.

In a bowl, combine the eggs, heavy cream and pepper. Use beaters to combine.

Pour egg mixture into each muffin cup until the cup is about 3/4 full.

Bake for approximately 20 minutes, until the surface is set.
